Mushroom Burger

Mushroom burgers are oh so tasty! They are filled with plenty of vitamins and minerals and they also contain small amounts of protein. These burgers have a meaty texture and holds up well when you cook them. Vegan, Gluten-free!Recipe


The mushroom burger is a very hearty dish that eaten in a bun, lentil or lettuce wrap. This recipe contains fresh ingredients that only takes a few minutes to combine for a scrumptious meatless burger. You can use shataki, portabello or white button mushrooms to vary the flavor. My absolute favorite is shataki mushrooms but I recommend that you give them all a try to see what suits your palate!

Recipe ingredients

  • 10 ounces of shataki mushrooms (portabello and white button can also be used )

  • 1/2 cup red or white onion chopped

  • 1/3 cup of red peppers diced

  • 1/2 cup fresh parsley

  • 1 Tablespoon of garlic powder

  • 1 teaspoon of onion powder

  • 1 teaspoon avocado oil

  • 1 teaspoon of vegan Worcestershire Sauce

  • 1/2 to 3/4 teaspoon salt

  • 1/8 teaspoon of fresh ground pepper

  • 1/8 teaspoon of liquid smoke

  • 1/2 cup chickpea or garbanzo flour or vegan bread crumbs

  • 1/2 jalapeno pepper without seeds (optional)



Instructions

DIRECTIONS:

  1. Place mushrooms, onions, red peppers, parsley and jalapeno pepper in a food processor and pulse until mushrooms are in small pieces. (No food processor, no worries - just chopped ingredients into small pieces using a knife

  2. Preheat a pan on medium heat and add avocado oil

  3. Add chopped ingredients and saute on medium heat for 4-5 minutes

  4. Add remaining ingredients and let simmer for 2 minutes

  5. Remove mushroom mixture from the stove and let it cool down

  6. When the mix cools down strain all the liquids by placing mushrooms in cheese cloth or a clean cloth. Squeeze until most of the liquid is gone

  7. Place mushroom mixture in a bowl and add chickpea flour. Make sure the flour is completely incorporated into the mushroom mix

  8. Preheat oven to 350 degrees Fahrenheit

  9. Get a baking dish and line with parchment paper

  10. Shape mushroom mixture into small burgers ( the mixture will seem soggy but trust me, it will firm up in the oven

  11. Place burgers on a parchment lined baking pan

  12. Brush a little oil on top of the burger before putting them in the oven (optional)

  13. Place burgers in the oven and cook 15 minutes on one side then flip and cook for 10-15 minutes on the opposite side( They should be nice an firm on the inside)

Top with lettuce, tomatoes, pickles, ketchup and mustard.
